Hailing from Cambodia’s Kampot province, Kampot pepper is highly prized for its layered flavour and aromatic complexity. Black Kampot is bold and citrusy, red Kampot is fruitier and sweeter, and white Kampot offers a milder, cleaner heat. Kampot pepper has a long history dating back to the 13th century, when it was mentioned in a Chinese medical text. It was introduced to Europe in the 16th century by Portuguese and Dutch traders, where it quickly gained popularity.
